How much lift do I need for 265/75R16 tires?

That's basically a 31x10.50. https://tiresize.com/comparison/
those should fit fine, but they would probably rub a little at full flex (if you're worried about that kind of thing).
If you're not doing stoopid stuff, that setup should work fine.
Not sure how much back space would be needed.
On a 2.5" OME lift; I was running 31x10.50s on 8" wide wheels with 3" backspace and it would only rub at full flex, or if I caught a little air.
16x8, 265/75R16, 4.5” BS, I could make it rub by flexing it out.
I’m swapping to 31x10.5 15x7, which will still rub but takes more flex to do so.
I have the OME 2.5” lift. A 1” body lift would make it better but I don’t want one.

No issues with the UFC skid plate and no BL?
The whole reason I installed a 1" BL was to accommodate the Extra clearance skid plate.
My plan for a while was 33x10.5, which I wanted 2.5” SL + 1.25” BL to make room for them. After a while I decided to ditch that plan due to basically no tires in 33x10.5. As such, I decided to stick to 31’s. Decided I’m going to do a front big hub kit, so since I need to get 5x5.5 wheels, I opted for 16x8s so I could run 265/75R16. Ended up not liking the fitment so I returned those rims and am having my tire guy get me 15x7s with 5x5.5 pattern.
Anyways, with the plan change of not going 33’s, I removed the body lift which necessitated removing the UCF and I opted to ditch the motor mount lift as well. Back to all stock with 2.5” suspension. I don’t plan to mess with it again, 31’s were always fine for my needs anyways and with 15x7’s I’ll finally like the stance I have as it won’t be so wide like it was in the past.
It would have been nice to keep the skid but overall I’ll be fine without it.

Were thinking alike Macho. After a 100+ mile snow and mud cover trail run last week I had it with the 15x8 stick out to fars and back to 15x7 OEM steelies. Im thrilled, no more mud in the windows or screwing up the soft top zippers. The mud and snow stays where it supposed to now.....under the fenders. 
Mine will still be sticking out still due to the 3.75” backspacing of all the 15x7 aftermarket rims, but it’s better than 15x8 significantly. I’d like to go back to OEM honestly, but the plan for locking hubs throws a wrench in that. None of the stock rims will clear the hub kits as far as I know.Were thinking alike Macho. Some stock CJ rims might be a solid choice for me since I’m converting to 5x5.5.
I have a '95 with 2.5 suspension and a 1 body lift...I run 31X10 15's and have room to go bigger....But with my gearing I'll stay where I'm at...........
