Carburetor Question

Hi all, been a long time due to illness and the YJ being at a mechanics or 5 months but me and the Jeep are back on the road.
So here is my query as Im new to carbs.
I had the EFI taken out and a Weber Carb put in and she drives again. Great news.
Drove her 130 miles home, no issue, then a 20 mile trip a few days later and she kept stalling.
She now has a manual choke which when checked does move the butterfly valves bug seems to have zero effect.
Starting her up is a combination of feathering the throttle to get her fired up, then holding the throttle and revs at about 2000rpm for a minute to get her to not stall at 700rpm. Then quickly get driving, keep the revs up at stops and eventually she doesnt stall when she rests at 700rpm.
I read on here about mixture and idle speed screws and followed the advice and got her idling at 1100 and off she goes! Like a new car! gave her a damned good thrashing around our country lanes and dips and hills and it was a whole different jeep! Tonnes of fun.

However, eventully came to a junction and she stalled before i even stopped. She started immediately but once again i had to feather the throttle to keep her from stalling all the way home. Got home, stalled.
I checked the carb and it's clean, filter is clean, fuel pump is set at 4.5, pump is only a month old, same as the carb. Half a tank of fuel.
Any idea why she wont simply hold her idle revs at 700 when hot and the choke makes no difference?

Brilliant, she starts after a fashion but unless i keep the revs up she stalls every time. Thought she might be empty but she now has a full tank and still stalls as soon as i take her out of gear. She seems fine at 2000rpm in gear, but any lower and she falters and snags etc.
